Meals Kids Love: Karen LePage of Patterns by Figgy's (Take Two)
Good morning everyone! I hope that you all have had a wonderful weekend... was the weather as nice where you are as it was here? It was absolutely beautiful and gave us the chance to be outside (and get some yard work done-phew). What did you do over the weekend?
I have to apologize for the glitch in last Monday's Meals Kids Love post. Our family was out of town, at the top of a mountain, and I had no laptop and very sporadic internet access. Sporadic meaning that I had internet when we had to come down the mountain into town for necessities. By necessities I mean mochas at the only local coffee shop. Hee hee. All to say that when I got the message that the pictures were not showing up in Karen LePage's post, there was nothing I could do but delete the post for the time being. I'm home now and we're going make this right! Here's Karen's post, with her beautiful photos!
It might not look like much, but a bunch of organic kale, a bag of organic frozen strawberries, and fresh or frozen pineapple (not canned) can really make for a happy morning.

….to make sure the smoothie, is, well, smooth, we don’t use the tough stems. After a quick rinse, Ella or I simply pull the leaves off and dump them in a strainer.
We pack the entire bunch of kale in, along with a cup or so of frozen pineapple chunks. (If I’m using fresh pineapple, I use half a peeled, cored fruit and save the other half for later in the week.)
Blend it up on the highest setting, adding water as necessary (usually about 1/2 cup at our house) and let it work its way to really, really, smooth. At this point, you can dump in the (12 oz) bag of frozen strawberries, or use a pint of fresh ones!
Generally, that’s all we use to make a delicious green smoothie, but today Ella felt like adding raspberries, too, and how could I refuse? (A handful of frozen raspberries are a nice morning snack, too, as you can see, or as a garnish for a special spoonful.)
Once it’s blended smooth, you can pour it into a glass and enjoy. We like ours nice and thick, but if you like to use a straw, add a little more water.
I pour the extra in a giant Mason Jar and label it so I remember to finish it quickly! With a big glass of one of these smoothies, my kids get at least all the calcium they need in a day, plus protein, and vitamin A and C!
Many thanks to Karen for being so understanding about last week and for sharing this recipe with us!
I'll be sharing photos from our trip later on this month. There's not much of March left (which I cannot believe), but I've got some fun things planned for the remainder of this fair month, so make sure you check in often!
If you haven't entered the pattern giveaway from Abby at Sew Much Ado, make sure you click on over and enter... Thursday is the last day to enter!
Have a wonderful day, everyone!

This looks great! We've been doing lots of smoothies lately. Do you know of a good substitute for kale? I can't find it where I live! Would spinach be okay?
